The reddish color of our smoked specialties is a result
of the cooking process. Our pork butts and beef brisket
are smoked for fourteen hours and our ribs, chicken and
pork steaks for more than five hours. This slow cooking
method in our wood pit smoker results in what is known as
a smoke ring. All our meats are cooked without sauce and
seasoned with our own very special dry rub. |
